| 1 | Boil large pot of water. |
| 2 | Add noodles. Cook untill a little under-done, drain and set aside. |
| 3 | Finely chop beans, spring onion and coriander. |
| 4 | Add to the noodles in a large bowel and mix. |
| 5 | Wisk eggs and fish sauce together. Add to the noodles. |
| 6 | Add cornflour and mix all together thoroughly. |
| 7 | Fry in piles on both sides until golden, taking care not to turn too soon. |
