2 pkt  rice noodles 
1/2 bunch  spring onions 
500 g  stringless beans 
50 g  coriander 
125 ml  fish sauce 
1 Tbs  cornflour 
4 large  eggs 
 salt and pepper 
 
1Boil large pot of water.
2Add noodles. Cook untill a little under-done, drain and set aside.
3Finely chop beans, spring onion and coriander.
4Add to the noodles in a large bowel and mix.
5Wisk eggs and fish sauce together. Add to the noodles.
6Add cornflour and mix all together thoroughly.
7Fry in piles on both sides until golden, taking care not to turn too soon.
