1 cup  sugar 
6 Tbs  brandy 
12 oranges 
3 Tbs  orange liqueur 
225 g  mascarpone 
3 Tbs  brown sugar 
3 Tbs  thickened cream 
 
1Prep: Peel oranges, remove all pith. Segment the oranges over a large bowl to collect the juice. Squeeze the membranes to extract all the juice and separate the juice from the segments.
2Combine the sugar and orange juice in a saucepan, stir over heat until sugar dissolves. Bring to the boil, reduce heat and simmer for 2 minutes. Remove from the heat, cool and add brandy and liqueur. Pour the cooled syrup over the orange segments, cover and refrigerate.
3Gently mix together the mascarpone, brown sugar and cream
