3 cups  baby carrots 
1 Tbs  walnut oil 
1/4 cup  cognac 
2 tsp  honey 
1 tsp  cinnamon 
 
1Prepare foil pouches for each serving. Prepare carrots to a large julienne.
2Toss carrots with other ingredients and spoon into foil pouches. Wrap up tightly and freeze.
3Defrost well before roastin in a moderate oven until the foil pouches are puffed and the carrots tender.
