 Olive Oil Cooking Spray 
4 150g each  Salmon or Ocean Trout fillets 
1/2 cup  coriander leaves, chopped 
1 Tbs  Brown Sugar 
1 tsp  Fish sauce 
1/4 cup  Lime Juice 
2 Tbs  Sweet Chilli Sauce 
3 Green Onions, thinly sliced, diagonally 
 
Preheat oven to 200c. Spray 4 30 x 40cm sheets of baking paper with oil. Score thickest part of fish twicewith a knife. Place fish onto baking paper.
